Simple Vegetable Soup
A healthy, warming soup that uses whatever vegetables are available. Great for lunches.
Prep: 10 minutes. Cook: 25 minutes. Difficulty: Easy. Serves 4.
Ingredients
- 1 onion, chopped
- 2 carrots, diced
- 2 potatoes, diced
- 1 zucchini, diced
- 1 can (400g) chopped tomatoes
- 4 cups vegetable or chicken stock
- 2 tablespoons olive oil
- Salt and pepper
- Dried herbs (oregano or thyme)
Instructions
- Heat oil in a large pot. Add onion and cook 3 minutes.
- Add carrots and potatoes. Stir 2 minutes.
- Add zucchini, tomatoes, and stock.
- Add herbs. Bring to a boil, then reduce to a simmer.
- Cook for 20 minutes until vegetables are tender.
- Season with salt and pepper.
