Simple Vegetable Soup

A healthy, warming soup that uses whatever vegetables are available. Great for lunches.

Prep: 10 minutes. Cook: 25 minutes. Difficulty: Easy. Serves 4.

Ingredients

  • 1 onion, chopped
  • 2 carrots, diced
  • 2 potatoes, diced
  • 1 zucchini, diced
  • 1 can (400g) chopped tomatoes
  • 4 cups vegetable or chicken stock
  • 2 tablespoons olive oil
  • Salt and pepper
  • Dried herbs (oregano or thyme)

Instructions

  1. Heat oil in a large pot. Add onion and cook 3 minutes.
  2. Add carrots and potatoes. Stir 2 minutes.
  3. Add zucchini, tomatoes, and stock.
  4. Add herbs. Bring to a boil, then reduce to a simmer.
  5. Cook for 20 minutes until vegetables are tender.
  6. Season with salt and pepper.

  • Cut vegetables into similar sizes for even cooking.
  • Add harder vegetables first.
  • The soup keeps well — make extra for the next day.
