Simple Chicken Curry

A mild, family-friendly curry that is easy to prepare and can be adjusted for spice preferences.

Prep: 10 minutes. Cook: 25 minutes. Difficulty: Medium. Serves 4.

Ingredients

  • 4 chicken thighs, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons curry powder
  • 1 can (400ml) coconut milk
  • 1 can (400g) chopped tomatoes
  • 2 tablespoons vegetable oil
  • Salt to taste
  • Fresh coriander for garnish

Instructions

  1. Heat oil in a pot over medium heat. Add onion and cook 3 minutes.
  2. Add garlic and curry powder. Stir for 1 minute until fragrant.
  3. Add chicken pieces. Cook for 3 minutes until sealed on all sides.
  4. Pour in coconut milk and chopped tomatoes. Stir well.
  5. Bring to a simmer. Cook for 20 minutes on low heat.
  6. Season with salt. Garnish with coriander.
  7. Serve with steamed rice or flatbread.
