Simple Chicken Curry
A mild, family-friendly curry that is easy to prepare and can be adjusted for spice preferences.

Ingredients
- 4 chicken thighs, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons curry powder
- 1 can (400ml) coconut milk
- 1 can (400g) chopped tomatoes
- 2 tablespoons vegetable oil
- Salt to taste
- Fresh coriander for garnish
Instructions
- Heat oil in a pot over medium heat. Add onion and cook 3 minutes.
- Add garlic and curry powder. Stir for 1 minute until fragrant.
- Add chicken pieces. Cook for 3 minutes until sealed on all sides.
- Pour in coconut milk and chopped tomatoes. Stir well.
- Bring to a simmer. Cook for 20 minutes on low heat.
- Season with salt. Garnish with coriander.
- Serve with steamed rice or flatbread.
