Prep: 5 minutes. Cook: 15 minutes. Difficulty: Easy. Serves 4.

Ingredients

  • 4 chicken thighs (boneless)
  • 3 tablespoons soy sauce
  • 2 tablespoons honey or brown sugar
  • 1 tablespoon rice vinegar
  • 1 teaspoon fresh ginger, grated
  • 1 clove garlic, minced
  • 1 tablespoon vegetable oil
  • 1 teaspoon cornstarch mixed with 1 tablespoon water
  • Sesame seeds and spring onions for garnish

Instructions

  1. Mix soy sauce, honey, rice vinegar, ginger, and garlic in a bowl.
  2. Heat oil in a pan over medium-high heat.
  3. Add chicken thighs. Cook 5 minutes per side until golden.
  4. Pour the teriyaki sauce over the chicken.
  5. Reduce heat and simmer 3 minutes.
  6. Add cornstarch mixture. Stir until sauce thickens.
  7. Garnish with sesame seeds and spring onions.

Tips for Helpers

  • Flatten chicken thighs to even thickness for even cooking.
  • Watch the sauce carefully — honey burns easily.
  • The sauce should coat the chicken like a glaze.

Ingredient Substitutions

  • Chicken breast works too — slice thinner.
  • Maple syrup can replace honey.
  • Add broccoli or snap peas for a one-pan meal.
