Egg Fried Rice
The simplest version of fried rice — just eggs, rice, and a few seasonings. Ready in minutes.
Prep: 5 minutes. Cook: 5 minutes. Difficulty: Easy. Serves 2.
Ingredients
- 3 cups cooked rice (day-old)
- 3 eggs, beaten
- 2 tablespoons soy sauce
- 1 tablespoon vegetable oil
- 1 tablespoon sesame oil
- Spring onions, sliced
- Salt to taste
Instructions
- Heat vegetable oil in a wok over high heat.
- Add beaten eggs. Scramble lightly for 30 seconds.
- Add rice immediately. Stir-fry for 2–3 minutes.
- Add soy sauce and sesame oil. Toss well.
- Garnish with spring onions and serve.
Tips for Helpers
- Use day-old refrigerated rice.
- High heat is essential.
- Don't fully scramble the eggs before adding rice.
