Egg Fried Rice

The simplest version of fried rice — just eggs, rice, and a few seasonings. Ready in minutes.

Prep: 5 minutes. Cook: 5 minutes. Difficulty: Easy. Serves 2.

Ingredients

  • 3 cups cooked rice (day-old)
  • 3 eggs, beaten
  • 2 tablespoons soy sauce
  • 1 tablespoon vegetable oil
  • 1 tablespoon sesame oil
  • Spring onions, sliced
  • Salt to taste

Instructions

  1. Heat vegetable oil in a wok over high heat.
  2. Add beaten eggs. Scramble lightly for 30 seconds.
  3. Add rice immediately. Stir-fry for 2–3 minutes.
  4. Add soy sauce and sesame oil. Toss well.
  5. Garnish with spring onions and serve.

Tips for Helpers

  • Use day-old refrigerated rice.
  • High heat is essential.
  • Don't fully scramble the eggs before adding rice.

Ingredient Substitutions

  • Add any leftover vegetables or meat.
  • Fish sauce can replace soy sauce.
