Fattoush Salad
A vibrant Lebanese salad with crispy pita chips, fresh vegetables, and a tangy sumac and lemon dressing.

Ingredients
- 2 pita breads, torn into pieces
- 2 tomatoes, chopped
- 1 cucumber, chopped
- 1 red onion, thinly sliced
- 1 cup lettuce, torn
- ½ cup fresh mint leaves
- ½ cup fresh parsley, chopped
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon sumac
- Salt and pepper
- Olive oil for frying pita
Instructions
- Fry or bake pita pieces until crispy and golden. Set aside.
- Combine tomatoes, cucumber, onion, lettuce, mint, and parsley in a bowl.
- Whisk olive oil, lemon juice, sumac, salt, and pepper for the dressing.
- Pour dressing over the salad. Toss well.
- Add crispy pita just before serving so it stays crunchy.
Tips for Helpers
- Add pita at the very last moment — it goes soft quickly.
- Sumac gives the distinctive tangy flavour — look for it in Middle Eastern stores.
- This salad does not keep well — make it fresh each time.
