Hummus

Silky smooth chickpea dip with tahini, lemon, and garlic. A staple of Middle Eastern cuisine and a healthy snack.

Ingredients

  • 1 can (400g) chickpeas, drained and rinsed
  • 3 tablespoons tahini
  • 2 tablespoons lemon juice
  • 1 clove garlic
  • 3 tablespoons olive oil
  • 2 tablespoons cold water
  • Salt to taste
  • Paprika and extra olive oil for serving

Instructions

  1. Add chickpeas, tahini, lemon juice, garlic, olive oil, and salt to a food processor.
  2. Blend for 2–3 minutes until very smooth.
  3. Add cold water one tablespoon at a time until you reach your desired consistency.
  4. Taste and adjust lemon and salt.
  5. Serve in a bowl, drizzle with olive oil and sprinkle with paprika.

Tips for Helpers

  • Blend longer for smoother hummus — 3 minutes minimum.
  • Cold water makes the hummus lighter and fluffier.
  • Removing chickpea skins before blending gives the smoothest result (optional).

Ingredient Substitutions

  • Use peanut butter if tahini is unavailable — different but still good.
  • Add roasted red pepper or beetroot for flavour variations.
