Raita
A cool, refreshing yogurt condiment with cucumber and mint. Essential alongside any spicy meal.

Ingredients
- 300g plain yogurt
- 1 cucumber, grated or finely diced
- 1 tablespoon fresh mint, chopped (or ½ tsp dried)
- ½ teaspoon cumin powder
- Salt to taste
- Pinch of chilli powder for garnish
Instructions
- Grate cucumber and squeeze out excess water.
- Mix yogurt, cucumber, mint, cumin, and salt.
- Chill for 10 minutes if time allows.
- Sprinkle with a pinch of chilli powder before serving.
Tips for Helpers
- Squeezing water from the cucumber prevents the raita from becoming watery.
- Can be made an hour ahead and refrigerated.
- Add a grated carrot for colour variation.
Ingredient Substitutions
- Use diced tomato and onion instead of cucumber for onion raita.
- Greek yogurt makes a thicker raita.
