Sausage Casserole

Sausages in a rich tomato and bean sauce with vegetables. Hearty, warming, and incredibly easy to make.

Prep: 10 minutes. Cook: 35 minutes. Difficulty: Easy. Serves 4.

Ingredients

  • 8 pork sausages
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 can (400g) chopped tomatoes
  • 1 can (400g) baked beans or cannellini beans
  • 1 red bell pepper, sliced
  • 1 tablespoon tomato paste
  • 1 teaspoon dried herbs (thyme or oregano)
  • 200ml chicken stock
  • 1 tablespoon olive oil
  • Salt and pepper

Instructions

  1. Heat oil in a large pot. Brown sausages on all sides — about 5 minutes. Remove.
  2. Add onion and pepper. Cook for 3 minutes.
  3. Add garlic and cook for 30 seconds.
  4. Add tomatoes, beans, tomato paste, herbs, and stock.
  5. Return sausages to the pot. Stir gently.
  6. Bring to a simmer. Cook covered for 25 minutes.
  7. Season with salt and pepper. Serve with mashed potatoes or crusty bread.

Tips for Helpers

  • Brown the sausages first for extra flavour.
  • This casserole gets better if left to sit for 10 minutes before serving.
  • Double the recipe and freeze half for an easy future meal.

Ingredient Substitutions

  • Use chicken sausages or vegetarian sausages.
  • Any canned beans work — kidney, butter, or white beans.
