Sausage Casserole
Sausages in a rich tomato and bean sauce with vegetables. Hearty, warming, and incredibly easy to make.
Prep: 10 minutes. Cook: 35 minutes. Difficulty: Easy. Serves 4.
Ingredients
- 8 pork sausages
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 can (400g) chopped tomatoes
- 1 can (400g) baked beans or cannellini beans
- 1 red bell pepper, sliced
- 1 tablespoon tomato paste
- 1 teaspoon dried herbs (thyme or oregano)
- 200ml chicken stock
- 1 tablespoon olive oil
- Salt and pepper
Instructions
- Heat oil in a large pot. Brown sausages on all sides — about 5 minutes. Remove.
- Add onion and pepper. Cook for 3 minutes.
- Add garlic and cook for 30 seconds.
- Add tomatoes, beans, tomato paste, herbs, and stock.
- Return sausages to the pot. Stir gently.
- Bring to a simmer. Cook covered for 25 minutes.
- Season with salt and pepper. Serve with mashed potatoes or crusty bread.
Tips for Helpers
- Brown the sausages first for extra flavour.
- This casserole gets better if left to sit for 10 minutes before serving.
- Double the recipe and freeze half for an easy future meal.

- Any canned beans work — kidney, butter, or white beans.
