Chicken and Broccoli Stir-Fry

A healthy and quick stir-fry that combines tender chicken with crisp broccoli in a savoury sauce.

Prep: 10 minutes. Cook: 10 minutes. Difficulty: Easy. Serves 4.

Ingredients

  • 2 chicken breasts, sliced
  • 2 heads broccoli, cut into florets
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon cornstarch mixed with 2 tablespoons water
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced

Instructions

  1. Heat oil in a wok over high heat.
  2. Add chicken and stir-fry for 4 minutes until cooked. Remove.
  3. Add garlic, stir 30 seconds. Add broccoli and stir-fry 3 minutes.
  4. Return chicken. Add soy sauce and oyster sauce.
  5. Add cornstarch mixture. Stir 1 minute until sauce thickens.
  6. Serve with steamed rice.

Tips for Helpers

  • Don't overcook the broccoli — it should be bright green.
  • Slice chicken thinly for even cooking.

  • Shrimp or tofu can replace chicken.
