Avocado Toast

Creamy smashed avocado on toasted bread with simple toppings. The quickest healthy meal you can make.

Prep: 5 minutes. Cook: 2 minutes. Difficulty: Easy. Serves 2.

Ingredients

  • 2 slices good bread (sourdough, wholemeal, or rye)
  • 1 ripe avocado
  • 1 tablespoon lemon juice
  • Salt and pepper
  • Chilli flakes (optional)
  • Toppings: poached egg, cherry tomatoes, feta, seeds

Instructions

  1. Toast the bread until golden and crispy.
  2. Halve the avocado, remove the stone, scoop into a bowl.
  3. Mash with a fork. Add lemon juice, salt, and pepper.
  4. Spread onto toast. Add your chosen toppings.

Tips for Helpers

  • A ripe avocado gives slightly when pressed gently.
  • Lemon juice prevents browning and adds flavour.
  • Do not over-mash — chunky is better than smooth.

  • Use lime instead of lemon.
