Avocado Toast
Creamy smashed avocado on toasted bread with simple toppings. The quickest healthy meal you can make.

Ingredients
- 2 slices good bread (sourdough, wholemeal, or rye)
- 1 ripe avocado
- 1 tablespoon lemon juice
- Salt and pepper
- Chilli flakes (optional)
- Toppings: poached egg, cherry tomatoes, feta, seeds
Instructions
- Toast the bread until golden and crispy.
- Halve the avocado, remove the stone, scoop into a bowl.
- Mash with a fork. Add lemon juice, salt, and pepper.
- Spread onto toast. Add your chosen toppings.
Tips for Helpers
- A ripe avocado gives slightly when pressed gently.
- Lemon juice prevents browning and adds flavour.
- Do not over-mash — chunky is better than smooth.
