Beef Stir-Fry

A fast and flavourful stir-fry ready in under 20 minutes. Works with rice or noodles.

Prep: 10 minutes. Cook: 8 minutes. Difficulty: Easy. Serves 4.

Ingredients

  • 300g beef sirloin, thinly sliced
  • 1 red bell pepper, sliced
  • 1 broccoli head, cut into florets
  • 1 carrot, thinly sliced
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon cornstarch mixed with 2 tablespoons water
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, minced

Instructions

  1. Mix soy sauce and oyster sauce in a small bowl. Set aside.
  2. Heat oil in a wok over high heat.
  3. Add beef slices and stir-fry for 2 minutes until browned. Remove and set aside.
  4. Add garlic and ginger to the wok. Stir for 30 seconds.
  5. Add vegetables and stir-fry for 3 minutes until slightly tender.
  6. Return beef to the wok. Pour in the sauce mixture.
  7. Add cornstarch mixture and stir for 1 minute until the sauce thickens.
  8. Serve immediately with steamed rice.

Tips for Helpers

  • Slice beef against the grain for tenderness.
  • Keep heat high throughout cooking.
  • Don't overcook the vegetables — they should still have some crunch.

Ingredient Substitutions

  • Chicken or pork can replace beef.
  • Any vegetables work — use what is in season.
  • Soy sauce alone works if no oyster sauce is available.
