Grilled Kebabs
Marinated meat and colourful vegetables threaded onto skewers and grilled until charred and juicy.
Prep: 15 minutes (plus 30 min marinating). Cook: 10 minutes. Difficulty: Easy. Serves 4.
Ingredients
- 500g chicken or beef, cut into 3cm cubes
- 1 red bell pepper, cut into chunks
- 1 green bell pepper, cut into chunks
- 1 red onion, cut into chunks
- 1 zucchini, sliced
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper
- Wooden or metal skewers
Instructions
- Mix olive oil, lemon juice, garlic, cumin, paprika, salt, and pepper.
- Add meat and toss to coat. Marinate for 30 minutes.
- Soak wooden skewers in water for 30 minutes.
- Thread meat and vegetables alternately onto skewers.
- Grill or pan-fry over medium-high heat for 3–4 minutes each side.
- Serve with rice, pita, or salad.
Tips for Helpers
- Alternate meat and vegetables for even cooking and colour.
- Do not push pieces too tightly together — leave small gaps for heat.
- Brush with leftover marinade while cooking for extra flavour.

- All-vegetable kebabs with halloumi work great too.
