Grilled Kebabs

Marinated meat and colourful vegetables threaded onto skewers and grilled until charred and juicy.

Prep: 15 minutes (plus 30 min marinating). Cook: 10 minutes. Difficulty: Easy. Serves 4.

Ingredients

  • 500g chicken or beef, cut into 3cm cubes
  • 1 red bell pepper, cut into chunks
  • 1 green bell pepper, cut into chunks
  • 1 red onion, cut into chunks
  • 1 zucchini, sliced
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper
  • Wooden or metal skewers

Instructions

  1. Mix olive oil, lemon juice, garlic, cumin, paprika, salt, and pepper.
  2. Add meat and toss to coat. Marinate for 30 minutes.
  3. Soak wooden skewers in water for 30 minutes.
  4. Thread meat and vegetables alternately onto skewers.
  5. Grill or pan-fry over medium-high heat for 3–4 minutes each side.
  6. Serve with rice, pita, or salad.

Tips for Helpers

  • Alternate meat and vegetables for even cooking and colour.
  • Do not push pieces too tightly together — leave small gaps for heat.
  • Brush with leftover marinade while cooking for extra flavour.

Ingredient Substitutions

  • Use prawns for seafood kebabs.
  • All-vegetable kebabs with halloumi work great too.
