Lamb Kofta

Spiced minced lamb shaped onto skewers and grilled until golden. Juicy, flavourful, and perfect with flatbread.

Prep: 15 minutes. Cook: 10 minutes. Difficulty: Easy. Serves 4.

Ingredients

  • 500g minced lamb
  • 1 onion, grated
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • ½ teaspoon cinnamon
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper
  • Wooden or metal skewers
  • Olive oil for cooking

Instructions

  1. If using wooden skewers, soak in water for 30 minutes.
  2. Mix lamb, grated onion, garlic, spices, parsley, salt, and pepper.
  3. Divide into 8 portions. Shape each around a skewer in an elongated shape.
  4. Heat a grill pan or barbecue to medium-high.
  5. Brush kofta with oil. Cook for 4–5 minutes each side until cooked through.
  6. Serve with pita, yogurt sauce, and salad.

Tips for Helpers

  • Grate the onion — do not dice — so it binds with the meat.
  • Wet your hands when shaping to prevent sticking.
  • Can be shaped without skewers as patties.

Ingredient Substitutions

  • Use minced beef if lamb is unavailable.
  • Shape as patties and pan-fry if you do not have skewers.
