Lamb Kofta
Spiced minced lamb shaped onto skewers and grilled until golden. Juicy, flavourful, and perfect with flatbread.
Prep: 15 minutes. Cook: 10 minutes. Difficulty: Easy. Serves 4.
Ingredients
- 500g minced lamb
- 1 onion, grated
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon coriander
- ½ teaspoon cinnamon
- 2 tablespoons fresh parsley, chopped
- Salt and pepper
- Wooden or metal skewers
- Olive oil for cooking
Instructions
- If using wooden skewers, soak in water for 30 minutes.
- Mix lamb, grated onion, garlic, spices, parsley, salt, and pepper.
- Divide into 8 portions. Shape each around a skewer in an elongated shape.
- Heat a grill pan or barbecue to medium-high.
- Brush kofta with oil. Cook for 4–5 minutes each side until cooked through.
- Serve with pita, yogurt sauce, and salad.
Tips for Helpers
- Grate the onion — do not dice — so it binds with the meat.
- Wet your hands when shaping to prevent sticking.
- Can be shaped without skewers as patties.
Ingredient Substitutions
- Use minced beef if lamb is unavailable.
- Shape as patties and pan-fry if you do not have skewers.
