Ingredients

  • 400g macaroni pasta
  • 50g butter
  • 3 tablespoons plain flour
  • 500ml milk
  • 200g cheddar cheese, grated
  • 50g parmesan, grated
  • 1 teaspoon mustard (optional)
  • Salt and pepper
  • Extra cheese for topping

Instructions

  1. Cook macaroni according to packet instructions. Drain.
  2. Melt butter in a saucepan over medium heat.
  3. Add flour. Stir constantly for 1 minute to make a roux.
  4. Gradually add milk, stirring continuously to avoid lumps.
  5. Cook for 3–4 minutes until the sauce thickens and coats the back of a spoon.
  6. Remove from heat. Stir in cheddar, parmesan, and mustard.
  7. Add cooked macaroni. Mix well.
  8. Pour into a baking dish. Top with extra cheese.
  9. Bake at 190°C for 15 minutes until golden and bubbly.

Tips for Helpers

  • Add milk slowly and stir constantly — this prevents lumps in the sauce.
  • The sauce should be thick enough to coat the back of a spoon before adding cheese.
  • Can be served without baking if you are short on time.

Ingredient Substitutions

  • Any short pasta works — penne, fusilli, or shells.
  • Add broccoli or ham for extra nutrition.
