Banana Bread
Moist, sweet banana bread that uses up ripe bananas. Mixed in one bowl and baked to golden perfection.
Prep: 10 minutes. Cook: 50 minutes. Difficulty: Easy. Serves 8.
Ingredients
- 3 ripe bananas, mashed
- 100g melted butter
- 150g sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 200g plain flour
- Pinch of salt
- 50g walnuts or chocolate chips (optional)
Instructions
- Preheat oven to 180°C. Grease a loaf tin.
- Mash bananas in a large bowl with a fork.
- Mix in melted butter, sugar, egg, and vanilla.
- Add baking soda, flour, and salt. Stir until just combined — do not over-mix.
- Fold in walnuts or chocolate chips if using.
- Pour into the loaf tin.
- Bake for 50–55 minutes until a skewer comes out clean.
- Cool in the tin for 10 minutes, then turn out onto a wire rack.
Tips for Helpers
- The riper the bananas, the sweeter and more flavourful the bread.
- Do not over-mix — lumpy batter is fine and gives a better texture.
- Check with a skewer or toothpick — if it comes out clean, it is done.
Ingredient Substitutions
- Use oil instead of butter for a dairy-free version.
- Add cocoa powder for chocolate banana bread.
